About this winei

Our Estate Shiraz is crafted with a commitment to traditional winemaking values. Fermentation takes place in original open vats well over 150 years old, with maturation then in similarly aged large French oak prior to bottling. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.

The result is fruit-driven wines of much flavour and substance generally showing lifted violets, spice, and clove aromas, the palate bold and bright with wild berry and plum fruits finishing with supple and savoury tannins.

Further cellaring has been proven over the years to develop added character and complexity with earthy, leather and cedary/cigar box qualities coming to the fore, the tannins softening and comfortably sitting in the background.

A most definite food-friendly wine.
When young the bold and fruit forward characters of Tahbilk Shiraz would be well suited to robust meat based stews, grilled or roast beef and strong hard cheeses especially cheddar.
With some age look to game dishes of roast duck, venison or kangaroo and the leanness and delicate flavours of veal.

Tasting Notei

Tahbilk 2021 Shiraz
Silver Medal Winner | Halliday 94 Points | Enjoy Now to 2033/2036
"Shiraz shines in 2021 with a clean, pure, natural fruit drive that is quite stunning – and delicious.
Brings great varietal definition to the glass in heady scents of violet florals, earth, ripe black fruits, plum, aniseed and sweet spices. A fine line of tannin guides the palate, finishing with style and grace."

Tahbilk 2020 Shiraz
Halliday 93 Points | Enjoy Now to 2030/2035
Considered to be a year that produced 'terrific Reds', this is undeniably Tahbilk Shiraz.
Fresh and lively with aromas of earth, spice and dark plums, the palate is robust and savoury with black cherry band more plum fruits. A juicy grape acidity contributes to delicious current enjoyment with a sturdy backbone of ripe tannins giving the structure to support further character developing out to 2030/2035.

Tahbilk 2017 Shiraz (As reviewed on release)
Halliday 93 Points | Enjoy Now to 2030+
“Dark red with garnet hues. This is fresh and lively with blackcurrant and plum to the fore, spice from oak maturation later, and in complete balance. Tannins are ripe and fruit based too, infusing a nice cherry pip character to the medium-bodied flow of the wines. Drink now or hold for medium term.”

Tahbilk 2016 Shiraz
Silver Medal Winner | Halliday 94 Points | Enjoy Now to 2028/2032
“This is one of the most elegant and fresh Shirazs yet produced by Tahbilk, all the right decisions made in the vineyards and winery. A typical touch of Tahbilk earth wends its way through the plum and blackberry fruit of a wine that has long since proved its longevity, more recently protected by its screwcap and with no need for time to allow the tannins to soften."
James Halliday | www.winecompanion.com.au

Tahbilk 2015 Shiraz
Silver Medal Winner | Halliday 94 Points | Enjoy Now to 2029/2031
"The nose of the 2015 Shiraz is opulent and full of plum and raspberry. The fruit is slightly jammy indicative of the time spent in bottle. The nose is reminiscent of old world leather, cocoa nib, salami, clove and nutmeg.

On the palate the wine is still full of bright acidity meaning this wine has still got a lot more to give. More of what was on the nose is on the palate coupled with a tarty cranberry and raspberry note. The fruit is the star of the show the tannins are there but more to support."
Holly Cusworth | Tahbilk Cellar Door Manager | July 2024
