Roast Chicken with lemon & fresh herbs

This recipe takes cooking a simple chicken up a few notches. It's finger-licking good! You'll get your hands a little messy but will be well worth the effort. It is super tasty and the leftovers are even better the next day!

This recipe serves 4 people.
With age, Marsanne develops into a wonderfully rich and complex honeyed gem. The palate is light, bright & nicely balanced with a good refreshingly dry finish. Tahbilk Marsanne pairs beautifully with tasty dishes such as roast chicken.
2 bunches of fresh soft herbs, such as basil, flat-leaf parsley, thyme, oregano or marjoram (60g)
2 large slices of butter
1 lemon (boiled)
1 x 1.4 kg whole free-range chicken
4 fresh bay leaves
2 sprigs of fresh rosemary
butchers string for trussing
Preheat the oven and a roasting tray to 220ºC.
Pick and finely chop the soft herbs. Pour a glug of olive oil over the herbs as this will help infuse the flavour.
Lift the skin from the breast and stuff the fresh herbs under the skin carefully pushing them down with a small spatula or spoon.
Insert a large slice of butter on either side under the skin.
Season generously with salt and black pepper and rub into the skin with a glug of olive oil.
Prick the boiled lemon and insert it into the cavity along with the bay leaves and rosemary. The boiled lemon acts as a flavour bomb and will infuse its flavour beautifully.
Truss the chicken into a compact bundle and tie as firmly as possible.
Cook for 1 hour or until the juices run clear. The skin should crisp-up nicely on top.
Remove from the oven and rest for 5-10 minutes while you prepare a generous garden salad packed full of your favourite fresh ingredients.
Carve your chicken and place on a serving plate ready for the table.
