    About this winei

    Tahbilk Shiraz - and Cabernet Sauvignon - is crafted with a commitment to traditional wine-making values.
    Fermentation takes place in original open vats over 155 years old, with maturation then in similarly aged large French oak prior to bottling. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.
    The resultant releases are noted as being fruit-driven wines of much flavour and substance, proven over the years to develop added character when cellared.

    Tasting Notei

    "The nose of the 2015 Shiraz is opulent and full of plum and raspberry. The fruit is slightly jammy indicative of the time spent in bottle. The nose is reminiscent of old world leather, cocoa nib, salami, clove and nutmeg.
    On the palate the wine is still full of bright acidity meaning this wine has still got a lot more to give. More of what was on the nose is on the palate coupled with a tarty cranberry and raspberry note. The fruit is the star of the show the tannins are there but more to support.
    Drink now but could cellar for a further 5-7 years."

    “The colour isn’t particularly deep, but the hue is bright. The wine, too, is fresher and more lively than those of yore.
    The flavours span blackberry, plum and cherry, the tannins ripe and balanced in a medium-bodied palate.
    Large oak vats and smaller French and American barrels were used in maturation.”

    VINTAGE 2015
    The winter of 2014 started well with above average rainfall for June and July, then nothing in August. The rollercoaster continued with September above, below for October, higher for November and low for December. The vineyard managers were irrigating at budburst and continued through Spring.
    Notwithstanding the unstable weather the vineyards remained healthy and disease free ... amazing considering the forecast conditions.
    Vintage itself started early – mid February – and continued apace until a lull in ripening early March that allowed the winery to catch up.
    The whites from 2015 show intense varietal characters, particularly the Marsanne & Riesling. Flavours in the reds are bright and concentrated - a very good year
