"Bright hue, starting to lighten off; a move to earlier picking (or is it the vintage?) is paying off, with more elegant, less overtly robust, wines, with more red fruit flavours in this cabernet than prior vintages, and 18 months in French oak (mainly used) another plus."

“The 2010 Cabernet shows typical choc/plum, blackcurrant and mint with the colour being trademark Tahbilk medium brick red. The flavours are quite voluminous on the palate with a slight savoury note creeping through. The tannins have softened. It’s an old world style that displays a regional flavour density to the palate. As the wine opens up and fleshes out it starts to show some secondary cedar elements making it a perfect match with roast meats.”
John Helmer – Surf Coast Times
“Old-school Cabernet with aromas of blackberry bushes beside a dusty road. A comforting earthiness – almost of sweated pine mushrooms mixed with dark blue fruits – adds up to a solid pile of Cabernet. Full of flavor, yet never heavy nor masked by overbearing, grippy tannins.”
Tony Love - Adelaide Advertiser
“Look, I know I bang on about obscure grapes and rare hipster wines. So this week I thought I’d rave about the latest vintage of a ridgy-didge Aussie classic you might actually be able to buy at your local bottle-o (Editor’s Note: Or delivered to you through the Wine Club!). It’s a gloriously old-fashioned Victorian "claret": dark black fruit, iodine and bay leaf, firm but elegant tannin. Drink with a roast or cellar for a decade.”
Max Allen - The Australian
“Tahbilk’s long-lived, medium-bodied Cabernet comes with a mother-load of tannins – sturdy, grippy tannins that permeate the underlying fruit flavours, giving a satisfying, chewy texture. In the 2010 vintage, those tannins seem more prominent than usual. Though underlying fruit flavour provides an offsetting sweetness, tannins define Tahbilk Cabernet and account for its great longevity. Serve the wine with juicy, pink lamb or beef, and the protein strips away the tannins to reveal the ripe, blackcurrant-like varietal flavour.”
